Godwits in flight
In the top photo there are three [b]BAR-tailed Godwits[/b] left and 2nd-from-left and 2nd-from-bottom...I don't see any Asian Dowitchers in this series.

The photos are not too clear but the three birds highlighted by John H (which are visible in all three photos) look to me more like Asian Dowitchers - straight, all-dark bills, white (not barred underwing) and clear projection of the feet beyond the tail. It's late in the year for these to be around - perhaps non-breeding birds that will stay in Hong Kong for the summer.
The other birds are Black-tailed Godwits.

To a green birder(me), any suggestion or explanation leads me to search more and learn more.
A very hot day and they flied around and then stayed far far away. Just manage to take some photos in flight.
