hmm, which meant if we ordered duck dishes in China, we might be eating mallards?

I do not think so as poutry should be lower in cost for businessmen than captured birds, unless you order specifically a mallard that you should avoid as a person who appreciates wild birds.

Let's just say if you don't want to run the risk of eating Mallards,don't order duck in other parts of China ie outside of HKSAR.

You're right, yet I don't know whether they're reared by farmers or captured wild birds, but the photos were taken outside the restaurant where we had our lunch (didn't remember we had ducks as dishes though), along with some other birds, say, white muscovy ducks, quail-like birds ... they just weren't those we normally eat, I guess they're 野味.
