About identification, one quick way to learn local common birds is to check field guides. For instance Birds of HK and South China. This book should be easy to get from local book shops / HKBWS office / online.
Photography guides of local birds are also available.
A lot about birds can be learnt through cross checking of your photos and these field guides.
