i went on Jan-Feb and Oct-Nov period
 
Jan-Feb : more landscape to shoot as the weather is excellent but with occasional rains. The fields are greener with stacks of hays waiting to be collected. The sheeps are probably 'naked'. Temperature is a cool 20 degrees. For birds, the albatross chicks probably just hatched so cant get any good shots and weather at the Otago was very bad when i went, its hazy and visiblity was bad for the 3days i was there. Kaikoura was very good when i was there, can shoot white fronted terns real close, if you go on birding out in the sea, you can get the other species of albatross and petrels real close.
 
Oct-Nov : colder at 5-15degrees. I experienced more hazy days. The fields are drier, sheeps are in thick woolen coat.  The albatross just came back to nest, lots of flying, the stewart island shags, little shags, pied shags, spotted shags and reb bills gull will also be nesting. Lots of opportunities to shoot nests and chicks at Otago. A lot of raptors(NZ falcons and Australiasian falcons) sighted in the fields as well. The Spur winged Plovers will be nesting at most of the fields as well. If you are lucky can see the chicks running about. They are 1 pair in almost every field.
 
I will post the Spotted shags nests later  
 
Generally, NZ is good all yr round.. lots of photographic opportunities be it landscape or birds
